I created the Satay Mickey, as food is definitely one of the things that comes to our mind when we think of Singapore. As iconic as it is in our culture, hawker food is slowly losing its authenticity and facing 'extinction’. Over the past decades, the true flavours and experiences of our hawker food is slowly disappearing. Less locals are interested in the hawker business, and many family food businesses struggle to get the next generation to continue their legacies. Will hawker food survive the next decade, or disappear eventually from our culture?
